Quick Sausage and Egg Muffins


A nutritious Sahur* meal [Breakfast] for Ramadan*




Muffins don't always have to be enjoyed sweet in fact these salty Muffins are just delightful. They are perfect for breakfast and ideal for Sahur when eaten in Ramadan. The best part about them is that you can create your  very own version of salty Muffins adding your favorite veggies and meat. Additionally you can make your toddlers and kids eat these salty Muffins by hiding some extra veggies like I do with spinach. You may serve them with any delicious sauce/chutney or how I recommend it, with tzatziki  (jogurt based cucumber salad).
If I have hectic plans for the next morning I bake them the night before, so I just need to re-heat these salty Muffins early morning. Every child gets his tasty Muffins with some fresh juice and we are on the go. Same goes for Sahur meals, if you don't want to bake them that early in the morning, you can simply make them the night before. It can obviously also be served as a Iftar* meal or a picnic, school snack.




So here is the basic recipe:

Makes 10 Muffins
Baking time: 15 minutes


Ingredients:
  • 6 eggs
  • 100ml milk
  • 2 garlic cloves
  • 1/2 tsp Black Pepper 
  • 100g spinach leaves 
  • 1 cup cooked sausages 
  • 1/2 cup cheddar cheese 

Method:
  1. Whisk together eggs, milk, garlic cloves, salt, pepper & spinach leaves in a bowl. 
  2. Pour the mixture into a muffin tray and add cut sausages into the container. 
  3. Sprinkle some cheese on top 
  4. Bake it in a preheated oven for 15 minutes at 180°C. 
  5. Serve hot with a sauce of your choice.
