This is definitely one of my favorite Pakistani dishes. Since childhood these cutlets or as Pakistanis call it 'Shami Kebab' can be eaten in so many different ways. I as a child had it with Ketchup but people also enjoy these with chappati*, rice, salad or chutney/sauce. It's made out of meat and gram lentils. The combination of these two with spices makes an incredible flavorful taste. They are easy to make and you can cook so many pieces at ones. Shami Kebab are an excellent Iftar* item. You can make them ahead and freeze them. Whenever you want to make Shami Kebab for Iftar, you may de-freeze and fry them. Try making this easy recipe and enjoy them with your favorite sauce.

Here's the recipe:

Makes 20 Shami Kebabs

  • 1/2 kg Minced beef/mutton or chicken
  • 250g Gram lentils
  • Pinch cinnamon powder 
  • 1 Black cardamom
  • 2 tsp Whole cumin seeds 
  • 2 Whole red chilies
  • 1/4 Bunch Coriander leaves (chopped)
  • 1 tsp Red Chili powder 
  • 2 tsp Ginger/Garlic paste
  • 1 Onion (chopped)
  • 2 Green chilies (chopped)
  • 4 Eggs
  • Salt to taste 
  • Oil for frying 

  1. In a pot add minced meat, gram lentils, cinnamon,  black cardamom, cumin seeds and while red chilies with 1 liter of water. Cook the mixture till water dries. 
  2. Blend the cooked mixture 
  3. Add coriander leaves, red chili powder, ginger/garlic, onion, green chilies and salt and mix everything nicely 
  4. Wet your hands and shape round Kebabs 
  5. Beat the eggs and heat oil in a pan
  6. Dip the Kebabs in eggs and fry them till golden brown. 
  7. Serve them with various chutneys/sauces.
If you don't like it too spicy, you may reduce the amount of red chili powder.
