Coconut Macaroon

If you are looking for a quick and easy coconut recipe, then try out this one. Coconut Macaroons are great for all coconut lovers. Without any delay, let´s get to the recipe:
Prep Time: 10 mins
Baking Time: 15-18 mins
Ingredients:
- 1 1/3 cups unsweetened shredded coconut
- 1/3 cups sugar
- 1/8 tsp salt (pinch)
- 2 egg whites (of LARGE eggs) room temperature
- 1/2 tsp vanilla extract
Method:
- Whisk the egg Whites, sugar, vanilla and salt.
- Combine the shredded coconut with the egg mixture
- Shape the macaroons into small bite size balls
- Place the macaroons on a baking sheet and bake for approx. 15 - 18 mins at 180°C. Keep a close eye not to over bake the macaroons as they may become too dry.
Extras:
- You can drizzle some melted chocolate sauce on top to add some extra flavour.
- If the macaroons become too dry then try drizzling some sugar water on top (1:1 Water:Sugar)
